Tucked into the Honduran jungle on a quiet, pristine bay, El Palacio Rosa is a world away from the cruise congestion of Roatan's west end — which, frankly, has become what every other Caribbean port eventually becomes: crowded, commercialized, and indistinguishable from the last stop on the cruise circuit. Carib Bight is what Roatan used to be everywhere. Three reefs, the Roly Poly — a WWII naval cargo shipwreck grounded here in 1945 — and 400-year-old pirate tunnels. All accessible from the dock. A private sandy beach. A propane BBQ, flat iron grill, and pellet smoker at La Rosa. A color-lit infinity pool. A dive shop, a skiff, kayaks — and the kind of silence that reminds you why you traveled this far.

The owner lives in The Crow's Nest — the top floor — much of the year, bringing the kind of local knowledge no guidebook has. Jorge, watchman and maintenance manager since 1998, lives on-site and has raised three children here — now welcoming a two-year-old into the mix. Between the two of them, no question goes unanswered.

Kayak or paddleboard through a network of creek-tunnels carved between the island points and offshore keys by pirates 400 years ago — used to hide from the British Navy. One of the most unexpected highlights of the trip.
